Watermelon and Feta Salad


This is a somewhat unusual but totally delicious and cooling Mediterranean salad that takes all of 5 minutes to prepare. Serve as a side dish to kebabs, or other grilled meats.

1 Small watermelon
1 250g block of Feta, preferably goat cheese
3 springs parsely, chopped
2 tbsp Olive Oil
Salt and Pepper

  1. Remove the rind from the watermelon and cut into 3cm cubes.
  2. Cube the feta into 3cm cubes, reserving one cube and placing the rest in with the watermelon.
  3. Add olive oil, parsely, pepper, and a small bit of salt - too much will dehydrate the watermelon, making it a strange, unpleasant texture.
  4. Crumble the cube of feta over the top, and gently toss salad to combine.

  1. Funny you should post this because on a whim the other day, I tried out a chilled watermelon gazpacho at a local restaurant.

  2. Oh I need to buy a watermelon stat. I added torn mint and bits of prosciutto once and practically inhaled the whole damn salad. So yum.

  3. I'm a firm believer that anything + prosciutto = awesomeness. Prosciutto is Italian for "Fancy delicious bacon derivative". So versatile..so delicious..
